Training and Development Chef vacancy available at The Hotel Folk, based at Thorpeness Golf Club and Hotel, Suffolk
The Hotel Folk are looking for an enthusiastic, experienced chef to join their team as the groups Training and Development Chef.
Salary: £40,000pa
Scope of the Role
Training is at the heart of The Hotel Folk company values, and ethos; and this role is crucial to the training, development, recruitment, and retention of our kitchen teams. Reporting to the Group Training and Development Manager, and General Manager of Thorpeness Golf Club, and Company Director. The role is integral to the group strategy and requires the highest level of dedication and focus.
The Hotel Folk's Training Centre, located at Thorpeness Golf Club and Hotel, is a purpose designed environment to ensure our folk are trained to the highest level for the skills required for their role, alongside the training kitchen at Suffolk Food Hall, where our apprentices are trained on the Chef Development Programme.
Key Responsibilities:
- Work with the Group Training and Development Manager, to create the Chef Training and Development Strategy, and lead on its implementation.
- Deliver training courses and content for all levels of kitchen personnel.
- Mentor the trainee apprentices alongside their Head Chefs whilst being the key point of contact for the apprenticeship provider, training consultants, and trainees.
- Manage the training outcomes of the annual appraisal and coffee chat process to ensure training and development requests are planned and executed through a training calendar.
- Support the onboarding of new Folk joining our kitchens, ensuring all onboarding processes are followed.
- Execute a new workable process for induction as well as training of agency, temporary and work experience Folk.
- Maintain and develop relationships with schools, colleges, universities, and other educational bodies and chosen partners to encourage young people in to the industry and drive hospitality as a career choice.
- In collaboration with Head Chefs and kitchen personnel from across the group, implement and maintain an internal calendar of competitions and awards.
- Seek opportunities for The Hotel Folk to have a presence at local shows, events, and competitions as appropriate.
- Support and train all kitchen personnel to ensure a safe, positive, and professional working environment, and proactively reinforce our compliance with the Food Safety Policy, current legislation and agreed management processes.
- Complete ad-hoc quarterly kitchen audits with the Health and Safety Administrator, supporting the action points and outcomes.
- Work in collaboration with Head Chefs to ensure new food trends, cooking methods, and kitchen management remain at the forefront and focus of the operation.
- Influence and impact our Folk across all kitchens, taking a proactive hands-on approach to your role, understanding all hotel services, menus, and operations, whilst working alongside our folk during service.
- Be an excellent and confident communicator, being passionate about people, food, and culinary excellence.
Essential Experience:
- Proven experience of Training and Development within a kitchen brigade.
- Has Head Chef operational experience of managing a kitchen team in a hotel, restaurant, or hospitality sector.
- A passion for high quality, and culinary excellence.
Desirable Experience:
- To have successfully completed a training manager role in another organisation for one full working year or more.
Essential Qualifications:
- GCSE or equivalent – Maths and English
- Food Safety Level 3
Desirable Qualifications:
- Relevant training qualification i.e. CIPD Level 5 in Learning and Development
Essential Skills and Knowledge:
- Comprehensive understanding of current Food Safety practices and legislation.
- IT literate – able to use Word, Excel, Outlook, PowerPoint effectively to produce training related documents
- Confidence in engagement.
- Personal credibility
Desirable Skills and Knowledge:
- Coaching and mentoring and Group Training Techniques qualifications would be beneficial.
- Experience of curating and delivering training for up to and including management level.
Essential Ability/aptitude:
- Be able to deliver/facilitate engaging training sessions to groups of employees.
- Work to prioritise and meet strict deadlines.
- Able to work effectively as part of a team and to develop good working relationships at all levels within the organisation.
- Must have strong planning and organisational skills to strategically manage an annual training programme.
- Self-motivation, optimism, integrity, patience, enthusiastic, with an easy-going manner with a genuine desire to help people develop and grow within their role.
Desirable Ability/aptitude:
- Aptitude to keep up to date with new methods of training, trends, best practice etc.
Special requirements:
- Able to travel within Suffolk to all hotels.
- Flexible working pattern of 5 days out of 7, with varying shifts.
- Be available to work bank holidays if necessary.
