Typical Annual Programme
By joining our 15-month Chef Academy we will provide you with a blend of “on and off the job” training, whilst being mentored by one of our Kitchen Folk. You will have the opportunity to attend masterclasses and visit our suppliers to gain a real understanding of where our ingredients come from, something that The Hotel Folk is very passionate about.
Some of examples of what you can expect from the programme are;
Various masterclasses, including learning about Shellfish & fish, Patisserie, Breads & dough and much more. From visits to Pinney's Smokehouse in Orford to Lavenham Butchers and more.

Hannah - Demi Chef de Partie
Hannah first came to The Swan at Lavenham at the age of 14 on work experience and from that day she was always going to become a shining star. After completing 9 GCSE’s, Hannah left school and joined The Swan Kitchen Folk and has never looked back. From the moment she arrived she has gone from strength to strength and become an integral part of the way we deliver ‘Extraordinary Service’, and always being ‘Dedicated to the Details’.
“The Hotel Folk offered me the opportunity to join them as an apprentice at 16, which really helped me turn my dream of becoming a chef into a reality. I’ve had the help and guidance I needed and they are always here to support me.”
Adrian - Chef de Partie
Adrian joined the Food & Beverage Folk at Thorpeness Golf Club & Hotel in 2015, bringing with him a wealth of experience. It was whilst working here that Adrian expressed an interest in developing his passion for food and we were only too happy to support him. Adrian enrolled onto the Level 2 Commis Chef Standard at the age of 27, in the past two years he has seen his enjoyment and passion for cooking grow. Having passed his apprenticeship with a distinction, Adrian is now keen to continue with his development onto the Level 3 Chef de Partie Standard.

Natalie - Chef de Partie
Natalie’s first experience working for The Hotel Folk was during a work experience placement at The White Lion when she was 15. Upon leaving school, Natalie joined us as an apprentice to develop her skills in the kitchen. Since then, she has proven herself to be a valuable member of The Hotel Folk and has recently qualified with a Level 3 Chef de Partie Apprenticeship Standard.
